BBQ Smoker Recipe

Smoked Turkey Breast with Spiced Summer Apricot Mustard Glaze


For this mouthwatering smoked Turkey recipe you will need 2 large turkey breasts with skin and bone removed (approx. 2kg)


Preparation:


1. Wash and pat the turkey breast dry using a paper towel.

2. In a bowl add cinnamon, brown sugar, fresh nutmeg, pepper, dried oregano and chili flakes. Rub the turkey breast all over to coat.

Place them in a sealable plastic bag and let chill in the refrigerator overnight.


3. Prepare the apricot mustard glaze. In a saucepan set over low heat combine apricot jelly, Dijon mustard, lemon juice, rice wine vinegar, and shallots stir to combine.



Simmer on low heat for 5 minutes and then remove. Separate 1 cup for a dipping sauce the other for glazing during the smoking process.


4. The next day, prepare 2 smoke pouches. Place 4 cups (1 liter) of apple wood chips in a bowl of cold water to soak for 1 hour and reserve 2 cups (500ml) of dry wood chips.

5. To build a smoke pouch, drain 2 cups (500ml) of the wet wood chips and squeeze excess water out. Spread wet wood chips on a large piece of aluminum foil. Place 1 cup (250ml) of dry wood chips on top. Mix them together.

Close the foil around the chips to make a sealed foil package. Use a fork to puncture holes in the top and bottom of the foil pack to allow the smoke to flow through and infuse the meat. Repeat to make second pouch.


6. Remove turkey from refrigerator and rub the kosher salt all over.

7. Prepare the barbecue for indirect grilling. Preheat the grill to 220°F/110°C. Place one smoke pouch directly over the heat source. Close the lid and wait for smoke.

Once BBQ is smoking, place the turkey breasts on the side of the BBQ without direct heat.

Smoke the turkey over indirect heat for 2 hours or until thermometer set in the thickest part of the breast reaches 165-170°F. Every 30 minutes paint the turkey with the apricot glaze.


8. Remove from grill tent with aluminum foil to allow to rest 15 minutes before slicing. Serve with remaining glaze.

Yield: Serves 6-8

Smoked Turkey Tips

For the best results when smoking a Turkey you can use this simple marinade to help keep the poultry moist and tender. To put the tenderising process in motion, coat your chicken meat first with 1:1 parts of olive oil, soy sauce and sprinkle on around 1/2 tlbs of peppercorns (assumes using a hooded BBQ grill, or smoker).



Place the chickens on the upper rack area of your BBQ grill or smoker, away from too much direct heat at around 250f to 300f for around 4 or so hours until the internal temperature of the BBQ chicken reaches 180f. Indirect cooking often yields superior results.

Open your BBQ once or twice as the chicken is cooking, and re-fill it with your favourite woodchips to your liking.

Remember to place a good drop of water to the BBQ's water dish to ensure that your BBQ chicken is getting smoked properly right until the end.

Cooking chicken on a grill is a great way to make an easy and tasty meal. There are a couple of simple rules for cooking chicken on a grill listed below. If you follow these suggestions and your recipe you should be able to grill chicken like a pro.


Suggestion #1

Grill chicken over lower heat (230 degrees F. - 250 degrees F.) for a longer amount of time (45 minutes to an hour or longer depending on your ability to know how hot your grill is).

  • This will allow you cook your chicken on a grill so it is cooked thoroughly
    without as much worry about flames charring the chicken.
  • You will not have to spend as much time moving chicken around while waiting for it to cook through.

Buy a meat thermometer

  • Boneless chicken is done when the internal temperature is 170 degrees F. and bone in chicken is done when the internal temperature is 180 degrees F. A meat thermometer will accurately tell you this without slicing into chicken on the grill and releasing moisture.
  • Never under or overcook chicken cooked on a grill when using a meat thermometer.
  • No guess work

Do not baste with thick sugary sauces, like BBQ sauce, while cooking. Baste with barbecue sauce after cooking is complete.

  1. This prevents fires from starting because of excess sauce.
  2. Reduces the chance of bitter and burned chicken on the grill cause by sugars burning in sauce.
  3. barbecue sauce really does not have to cook anyway.
  4. After chicken cooks. Baste with BBQ sauce and allow to glaze chicken on the grill for a couple of minutes before removing.

Suggestion #7

Allow chicken to rest after you are finished cooking it on the grill

  • This allows fluids to evenly distribute through chicken before eating
  • If you cut into hot chicken off the grill the fluids will run out of meat and the chicken will be less moist and succulent. Resting stops this from happening.
