Top tips for cooking
delicious barbecue chicken wings
There are four basic methods that you can use:
1. Direct method.
2. Indirect method.
3. Indirect method finished off by direct method.
4. Smoking.
Do
I need to cut off the tips of chicken wings?
Many
recipes, whether for grilling wing tips on the BBQ or indoors, required
the wing tips to be cut off, and this improves the presentation of
them, but it isn't essential that you do so, it really is a matter of
personal preference.
Do
you need to tuck the chicken wings in or not?
If
you leave the wing tips on then you need to decide whether to fold the
wing tips up behind the rest of the wing to make a good shape, or to
not. Some recipes call for the wings to be folded while others state
that you should spread them out to get more of the wing in contact with
the grill and therefore heat.
Most
people find that it is best to leave them untucked most of the time,
though if the wings are being cooked for a special occasion they can be
folded for a neater presentation.

Do
you marinate barbecue chicken wings?
For
the best results, it's beneficial to marinade the wings but it's fine
just to coat the wings using a BBQ brush a little oil prior to
grilling. The skin
of the chicken prevents that marinade from getting to the meat itself,
so if you want, make 2 or 3 deep slashes in the wings prior to
marinating.
How
long should you cook barbecue chicken wings for?
The
times below regarding how long to grill chicken wings are basic
instructions and don't include any marinading times, etc. More detailed
receipes are included at the bottom of the page. |
Direct
method for
cooking barbecue chicken wings
1. Rinse the wings under cool water, drain and blot dry with kitchen
paper.
2. Lightly oil the wings.
3. Oil the grill over a medium hot barbecue and cook the chicken wings
for 14 to 18 minutes, turning 4 to 5 times, until cooked through.
4. Serve.
Indirect
method for
cooking barbecue chicken wings
*requires a BBQ grill that has
a hood
1. Rinse the wings under cool water, drain and blot dry.
2. Lightly oil the wings.
3. Set-up your barbecue grill for indirect grilling with a drip pan in
the center.
4. If using a gas grill, put wood chips in a smoker box, such as the
Charcoal Companion Platinum smoker box shown to the right, and
place on
the barbecue. It using a charcoal grill, throw wood chips on the
charcoal.
5. Using a medium heat, oil the grill over the drip pan and cook the
chicken wings, covered, for about 1.5 to 2 hours until cooked through
and tender.
6. Serve |

Indirect
method of cooking wings finished using the direct method
1. Use the Indirect Method as shown above but at step 4 cook for about
1.5 hours only.
2. Move the chicken wings directly over the coals and cook for about 5
minutes per side. This method makes the skin more crispy than the
Indirect Method alone.
How
to smoke barbecue chicken wings
1. Rinse the wings under cool water, drain and blot them dry with
kitchen paper.
2. Lightly oil the wings prior to cooking.
3. Place the chicken wings on the smoker grid and smoke for about 1.5
hours.

6ounces (175g) of
chicken breast
allow 7 to 8 minutes on each side
6ounces (175g) of
boneless chicken thighs
allow 4 to 5 minutes on each side
10 to 11 ounces (275
to 300g) of breast on the bone
allow 25 minutes, turning regularly
8 ounces (225g) of
drumsticks and thighs on the bone
allow 15 to 20 minutes, turning regularly
9 ounces (250g) of
chicken quarters
allow 25 to 30 minutes, turning regularly
1.5 pounds (750g) of
chicken halves
allow 35 to 40 minutes, turning regularly
1 pound (450g) of
whole poussins
40 minutes or until the internal temperature reaches 185 degrees F (85
degrees C)
Whole chicken, cooked
over indirect heat
allow 15 minutes per pound (450g), plus 15 miniutes. Or until the
internal temperature reaches 185 degrees F (85 degrees C)
Large chicken wings
allow 20 minutes, turning regularly
Chicken kebabs
allow 10 minutes, turning regularly

What
if you can't use a barbecue to cook the wings?
Another
way of of cooking chicken wings is to bake them in the the oven, but
the wings will not be nearly as crispy.
However if you need to bake
your chicken wings heat the oven to 400 degrees and then put the wings
in a baking dish that has been coated with a little vegetable
oil.
Bake the wings for about 30 to 40 minutes and make sure that
the juices run clear from the wings before serving. |
