Barbecue
turkey is just as tasty as chicken if cooked correctly and basted with
a great barbecue turkey marinade. Try this mouthwatering, beer and herb
infused barbecue turkey marinade.
- 200 ml brown sauce
- 30 ml worcestershire sauce
- 1 small can of beer, approx. 200ml
- 2 chopped cloves of garlic
- Salt to taste
- Ground black pepper to taste
- 1 chopped onion
- 1 tsp dried basil
- 1 tsp dried oregano
- 1 tsp scotch bonnet chilli sauce
- 1 tsp red curry powder
- 1 tbls demerera sugar
To prepare the barbecue pork marinade

In a large glass bowl, combine all of the ingredients, one at a time,
gently stirring with a wooden or plastic spoon until all of the sauce,
herbs and spices have been mixed together thoroughly.

Cover the bottom of a baking dish with around half of the
barbecue turkey marinade. Place the turkey in the dish, and cover it with the remaining
mixture. Cover, and marinade the turkey in the refrigerator at least 8 hours
before barbecuing.
