
Bonanza Burgers
1½
to 2 pounds lean ground beef or pork
½ to ¾ cup chopped peeled onion
1 cup tomatoe based chili sauce
½ cup white wine or cider vinegar
½ cup water
2 tsp. chilli powder or to taste (Cayenne can be used in a small
quantity)
1 tsp. dry mustard
1 teaspoon Steak sauce
1 teaspoon light dark brown packed sugar
Salt and freshly ground black pepper to taste
6 hamburger or onion buns, each split in half
Spray a little vegetable oil into a large heavy saucepan, bring up to a
medium-high heat and sauté the ground meat and onions until the meat is
"just" browned. Stir the meat and onions continually and drain off the
excess fat.
Drop down the heat slightly and then add the chili sauce, vinegar,
water, chili powder, mustard, steak sauce, brown sugar and salt and
pepper to taste.
Continue to mix well and bring the mixture up to a gentle simmer and
leave uncovered for around 40 minutes. Use your judgement with regards
to the cooking time, it will vary slightly either way.
When the meat has cooked through, allow to cool, drain exess liquid and
pat dry.
Place the burger patties on the barbecue grill for a minute on each
side to finish them off and garning each burger with very finely sliced
red onion and thinly sliced tomatoes with a 1:1 mixture of Cheddar and
Monterey Jack cheese and finish off for a minute or two on the BBQ to
allow the flavours to meld together.
Serve the burgers directly into the buns, and serve with your favourite
BBQ sauce.
