
Barbecued Skewered Super Chicken
Ingredients
Serves 6
3 whole chicken breasts, split, skinned and boned
1/4 cup soy sauce
3 Tablespoons dry white wine
2 Tablespoons lemon juice
2 Tablespoons vegetable oil
3/4 teaspoon rosemary, crushed
1/2 teaspoon ground ginger
1 clove garlic, minced
1/8 teaspoon ground pepper
Preparation
Cut chicken breasts into strips about 1/4 inch thick. Combine remaining
ingredients in a glass dish (I used a zip-loc bag). Cover and chill for
3 to 6 hours.
Drain off the marinade and thread chicken strips lengthwise onto
skewers. Grill over hot coals for 3 to 4 minutes on each side.
I also skewed bell pepper pieces, red onion and mushrooms in between
the pieces of chicken.
