
Southern Style BBQ Chicken
Ingredients
1 cup apricot preserves 1/2 cup Dijon mustard 2 Tbsp fresh lemon juice 2 Tbsp fresh orange juice 1 Tbsp minced fresh ginger 2 Tbsp soy sauce 1 Tbsp packed light brown sugar 1 frying chicken (about 3 lbs) cut up or 3 lbs chicken parts
Preparation
In
a small saucepan, heat the preserves over low heat until just melted.
Transfer to a bowl and combine with the mustard, lemon juice, orange
juice, ginger, soy sauce, and brown sugar.
Light a fire in a charcoal grill. When the coals are medium hot, move them to one side of the fuel bed.
NOTE:
Put chicken pieces or just wings and drumsticks in a glass 9x13"
casserole, cover with foil and bake for 45-60 minutes in a 350°F oven.
When they are cooked through pour the sauce over and bake uncovered for
15 minutes or so.
