Pepper glazed gammon

Warm Beet and Onion Salad

Ingredients

  • 4 gammon steaks

  • 1/2 tsp Schwartz Black & Red Pepper

  • 1 tbs soft dark brown sugar

  • 1 tbs oil

  • 2 tbs clear honey

  • 2 oranges

  • 15 g (1/2 oz) butter

Method

  • Snip the gammon rind at 1cm (1/2") intervals. Mix 1/4 tsp Black & Red Pepper with the sugar, oil, honey and 2 tbs orange juice, squeezed from one of the oranges. Brush the mixture over the gammon and cook on the grill for 10-12 minutes, turning occasionally and brushing with the orange juice mixture throughout cooking.

  • Meanwhile, melt the butter in a small frying pan, slice the remaining orange and add to the pan together with the remaining 1/4 tsp Black & Red Pepper. Fry the orange slices gently for 1 minute, turning frequently.

  • Serve the gammon steaks with the orange slices placed on top for decoration.

Makes 4 servings.
