El Tel's Classic Barbecue Rub
Ingredients
4 shallots, peeled and minced 8 cloves garlic, minced 2 tablespoons packed brown sugar 2 teaspoons coarse salt 2 teaspoons cracked black pepper 2 teaspoons coriander seeds, coarsely crushed
Preparation
Combine all ingredients in a small bowl. Spread evenly onto meat. Cover meat. Refrigerate at least 2 hours or up to 24 hours.
Grill indirectly. (will burn over direct heat). Store unused rub in the refrigerator.
