
Longhorn BBQ rub
This Texan influenced BBQ rub works wonders with
pork
Ingredients:
- 1/4 cup salt
- 1/2 cup demerera sugar
- 1/2 cup chili powder
- 2 tbsp freshly ground black pepper
- 2 tbsp ground cumin
- 1 tbsp dry yellow mustard
- 1 tsp cayenne pepper
- 1/2 tsp paprika
- 1/2 tsp ground red pepper
Preparation:
Mix
together all the ingredients thoroughly in a bowl and rub into the meat
thoroughly prior to smoking or grilling.
You can make a BBQ sauce from the Longhorn BBQ rub by scaling down the
ingredients and adding the spice mixture to 2 or 3 cups of ketchup and
use it as a basting or dipping sauce. Tastes great with chicken and
turkey meat too.
