
Citrus Barbecue Sauce
Ingredients
1 onion, chopped 1/4 teaspoon chili powder 1 red chili pepper, seeded and chopped (see note) 1 tablespoon vegetable oil 1 cup orange juice 1/2 cup lime juice 2 tablespoons granulated sugar 2 tablespoons lemon juice 1 tablespoon chopped fresh cilantro 1 teaspoon salt
Preparation
In
a large skillet over low heat, saute chopped onion, chili powder,
chopped red chili pepper, and red pepper flakes in oil, stirring
frequently, until the onion is tender, about 5 minutes.
Stir in
orange juice, lime juice, sugar, lemon juice, cilantro, and salt.
Increase heat to medium-high, bring to a boil; reduce heat to low, and
simmer, uncovered, for about 10 minutes, stirring occasionally.
Makes about 2 cups.
Note:
Due to the fact that hot peppers contain oils that can burn your eyes,
lips and skin, protect yourself when working working with peppers by
covering one or both hands with plastic gloves or bags. Always wash
your hands thoroughly before touching your eyes or face.
