Fresh Papaya Sambal

1 papaya,
seeded and finely chopped
1/2 red onion, finely chopped
1 tbsp finely chopped cilantro
2 tbsp fresh lime juice
1 tbsp fish sauce
1 tsp sugar
salt, black pepper
Combine
papaya, onions, cilantro, lime juice, fish sauce and sugar. Add
salt and pepper to taste. Cover and let stand for 30 minutes at
room temperature to allow flavours to blend. Serve chilled or at
room temperature.

ahead
Make sambal up to 4 hours in advance. Cover and refrigerate. Stir
before serving.
Makes
approx 1 cup- (250ml).
