
Orange and Apricot Barbecue Sauce
Ingredients
1 medium onion, chopped 1 clove garlic, minced 2 tablespoons vegetable oil 1 can (17 ounce size) apricot halves, drained 1/4 cup cider vinegar 3 tablespoons undiluted frozen orange juice concentrate 3 tablespoons light brown sugar 1 teaspoon dry mustard 1/2 teaspoon ground ginger 1/2 teaspoon salt 3 drops liquid red pepper seasoning 3 pounds chicken, veal or pork
Preparation
Saute
onion and garlic in oil in a medium saucepan until tender, about 5
minutes. Place apricots in container of electric blender; cover; whirl
until smooth.
Add
vinegar, orange juice concentrate, brown sugar, dry mustard, ground
ginger, salt and red pepper seasoning. Cover whirl until just blended.
Stir
apricot mixture into sauteed onion; bring to boiling, stirring
constantly. Lower heat; simmer, uncovered, until thick, about 15
minutes.
Brush on the meat during the last 20 minutes of cooking.
