Chinese Pork BBQ Ribs
Ingredients
3 lbs of pork ribs, cut in 2-inch pieces across the bone and separated
into individual riblets.
Salt and pepper.
1 small jar of orange marmalade.
1 small jar of plum jam.
1 bottle of soy sauce.
2 teaspoons of ground fresh ginger.
1 whole garlic, chopped.
Preparation
The day before cooking, cut ribs into portion size, salt and pepper.
Place in a deep pan, big enough to hold the ribs and sauce. Mix
together the marmalade, plum jam, soy sauce, ginger and garlic; then
pour over the ribs. Cover with foil (airtight).
Refrigerate overnight.
The next day, thorough;y stir and mix the sauce and ribs. Cover with
foil (again, airtight). Cook in the pan on the grill for 50 minutes or
until tender. Take out, put on grill rack and brown. Takes only a few
minutes.
