Citrus Magic Five-Spice Ribs
Fruit and spices meld together to make this BBQ rib recipe something special
Ingredients
Brown sugar, packed 1/4 cup Chopped fresh cilantro 1/4 cup Lime juice 1/4 cup Frozen concentrated orange juice, thawed 1/4 cup Soy sauce 1/4 cup Sesame oil 1 tbsp. Garlic cloves, minced 2 Chinese five-spice powder 1 tsp. Pepper 1/2 tsp.
Preparation Racks of baby back ribs (about 1 lb., 454 g, each), Combine first 9 ingredients in a medium sized baking dish.
Add
ribs and turn to coat. Chill, covered, for at least 6 hours or
overnight. Drain marinade into a saucepan. Simmer on medium-low until
thickened.
Cook
ribs on indirect medium heat for about 1 hour, turning occasionally,
until meat is tender and starting to pull away from the bones.
Cook
for 30 to 45 minutes, turning often and brushing with marinade, until
ribs are glazed. Cover with foil and let stand for 10 minutes. Cut into
3-bone portions. Makes about eight 3-bone portions. 3-bone
portion: 383 Calories; 28.5 g Total Fat (12.8 g Mono, 2.9 g Poly, 10.1
g Sat); 92 mg Cholesterol; 12 g Carbohydrate; trace Fibre; 19 g
Protein; 483 mg Sodium Tip: Before cooking ribs, wash them and peel away the membrane or “silver skin.”
If left on the meat, this membrane will toughen and prevent any seasonings from penetrating it while it cooks.
