
Smoked Mustard Pork BBQ Ribs
Ingredients
1/3 cup of sugar.
1 teaspoon of black pepper.
2 teaspoons of paprika.
1 teaspoon of curry powder.
½ teaspoon of salt.
4 lb of pork ribs.
1 cup of brown sugar, packed.
2/3 cup of white vinegar.
½ cup of onion, chopped.
1/3 cup of spicy brown mustard.
2 garlic cloves, minced.
2 tablespoons of honey.
2 teaspoons of liquid barbecue smoke.
¼ teaspoon of celery seed.
Preparation
In a bowl, combine the sugar, black pepper, paprika, curry powder, and
salt.
Rub over the pork ribs, coating thoroughly.
Place the ribs in a shallow pan; then cover and chill for about 4 hours.
In a covered grill, arrange medium coals around a drip pan. Test for
medium-low heat above pan.
Place the ribs, fat-side up, on grill rack over drip pan but not over
coals. Lower grill hood.
Grill about 1 hour 20 minutes or until tender, turning once, and adding
more coals as required.
Meanwhile, for sauce: In a saucepan combine the brown sugar, white
vinegar, chopped onion, mustard, minced garlic, honey, liquid smoke and
celery seed.
Bring to boiling; reduce heat.
Cook, uncovered, for 30 minutes, or until slightly thickened, stirring
occasionally during last 15 minutes of grilling. Heat any remaining
sauce until bubbly and pass with ribs.
