For the
best results when cooking bbq chicken you can use this simple marinade
to help keep the poultry moist and tender. To put the tenderising
process in motion, coat your chicken meat first with 1:1 parts of olive
oil, soy sauce and sprinkle on around 1/2 tlbs
of peppercorns. For best results
place the chickens on the upper rack area of your BBQ smoker, away
from too much direct heat at around 250f to 300f for around 4 or so
hours until the internal
temperature of the chicken reaches 180f.
Open your
bbq smoker once or twice as the chicken is cooking, and re-fill it
with your favourite woodchips to your liking. Remember to place a good
drop of water to the bbqs water dish to
ensure that your bbq chicken is getting smoked properly right until the
end.
