If you don't want to burn the sauce or have it thicken too much, you want to stay near to the cooker and pay close attention to what you are doing. In the meantime you can still carry on with other cooking duties, but remember that you will want to stay close to your pan to stir or drop the temperature if required to ensure that your homemade barbecue sauce is cooked properly.
